Description
It is looking for:
- lamb French Rack VP Arabic (X grade lamb)
- derived from a standard 8 rib 37mm rack. Remove chine with saw and knife off feather bones
- provided ribs can be divided by a knife, enough chine has been removed, remove false cap and pieces of blade bone, ensuring that there is no damage to the rib eye and that it is fully intact in its normal position
- remove all fat and meat from rib fingers
- French back 37mm from the rib end towards the eye (Frenched back to the eye muscle)
- protruding ribs must be completely free of meat and gristle
- racks to be packed in pairs in the 69 position, boneguard may be wrapped completely around both racks but should not cover the ends of the eye muscle
- weight range: N/A
- packaging: TP8 Carton, 260 by 420 boneguard and a plain 225 by 380 vacuum bag
- labelling required: Arabic Insert and carton label (shows production and best before date)
- pack carton to maximum without bulging
