Description
You should be able to supply:
- boneless lamb tenderloin VP (all grades of frozen lamb)
- lamb derived from a bone in 1 rib chump off loin as specified
- a whole boneless fillet in one piece, that does not include bone slithers from the chine
- a separate tenderloin from the loin at the required length, with all membrane fat trimmed
The sliver skin must be left intact, but side runner.
Any gristle, bone slithers and loose pieces must be removed
The meat should:
- not include part or torn tenderloins
- be free of sawdust
- cleaned before packaging
