19/24 VG-L-DKöProduction, delivery and serving of lunchtime meals at Mühlberg/Elbe elementary school (service concession)---------------------------------------------The meals offered at the school must meet the (science-based) quality requirements for a healthy and accepted diet for children.The contractor undertakes to provide the client's institution(s) with healthy and sustainable meals during their opening days. The basic prerequisite for the mental and physical performance and health of children is a varied, needs-based diet. Nutritional behavior is already manifested in childhood and once acquired, nutritional patterns are often retained for a lifetime (Heseker and Beer, 2004). Schools therefore have a special role to play when it comes to children's nutrition - the food provided there should always serve the goal of promoting healthy growth and development in pupils and supporting their learning. In this context, the term "sustainability" encompasses the dimensions of ecology, society, economy and health in relation to nutrition and catering. These four dimensions can be anchored in the structures as well as in the processes and results of communal catering (DGE position paper, 2021). Aspects that support sustainable development should therefore also be taken into account when making food decisions. In the context of school communal catering, the reduction of waste, waste separation, the use of large kitchen appliances with a high energy and water-saving potential, optimized production processes, resource-saving use of goods and optimal storage, reduction of unserved food or recycling of leftover food, use of organically grown food and the consideration of quality seals and recommendations from environmental organizations have a positive effect in terms of sustainability.
