The management of the Mensa is awarded by the city of Kraichtal within the scope of a service contract to a food provider with experience in school catering under external control. The future contractor must offer lunch and refreshments during breaks in the refectory. The contractor must take over the sale of the breaks within the framework of a concession. Thus the complete handling of the food supply lies with the future food supplier. The Contractor shall provide the personnel and, as an additional service for the Principal, shall settle the accounts with the parents or pupils and any other entitled parties. The refectory was planned as a preparation kitchen so that temperature-decoupled production systems can be implemented. The bidder must decide on the basis of the kitchen plans whether the implementation of his production concept is possible in this refectory. The contractor will not make any further investments in the technology. If the caterer works with a temperature-decoupled system (Cook&Chill system or Cook&Freeze system), he is responsible for the extent to which he uses this food and which components he completes fresh on site. The Cook&Hold system (delivery of hot food) can also be used in spite of the existing possibilities to regenerate the food on site. All requirements are defined in the tender documents.
